Nourish Breakfast Bowl

Breakfast is my FAVOURITE meal of the day! Its the meal I get most excited about! It’s also the most important meal of the day! Providing you with nutrients and energy for the day ahead.

This recipe is very quick to make, and will set you up for the day ahead! The addition of the Nori Seaweed is rich in Iodine, that will support your thyroid function! (SEE NOTE*)

This recipe is Gluten free, Dairy free, Paleo, Vegetarian, Sugar free (choose your balsamic vinegar wisely) Grain free

Ingredients
1 (or 2) Organic Free Range eggs, soft boiled
1 handful of flat leaf parsley, roughly chopped
1 cup of mixed mushrooms – I used brown, button, oyster, enoki mushrooms
balsamic vinegar
ghee
cherry tomatoes, sliced in half
nori seaweed, sliced into strips

Method:
1. In a small pan, heat ghee and add in mixed mushrooms until lightly softened. When starting to soften, add in a splash of balsamic vinegar. once cooked set aside.
2. Add tomatoes to the pan and heat until softened.
3. Place all ingredients into a bowl and enjoy while warm.

Serves 1 person

NOTE:
* If you are currently taking thyroid medication speak to your Naturopath, Doctor or Health Practitioner before adding Seaweed into your diet
