Spicy Tofu Salad

You know its summer when blogs posts are filled to the brim with salads of every variety!

I recently made this salad one evening for dinner, I was tired, hungry and didn’t feel like being arms deep in washing up. This salad is simplicity at its best and it turns out, my Spicy Tofu Salad has been requested several times since then! so I know its a hit 🙂

A little note on soy: Firstly it’s an absolute must to always choose ORGANIC soy products, Soy beans are one of the highest GMO produced food in the world! that means not only are you having soy, you are also having chemicals and genetically modified versions of soy – which lets face it, for our health is far from ideal!

Soy products are not great for everyone, if you are unsure speak to your health professional.

This Recipe is Gluten free, Grain free, Casein free, Vegan, Refined sugar free

Ingredients

1 packed of firm organic tofu (organic, organic, organic!)
1 heaped tablespoon organic harrisa paste
1 very large bunch of rocket, washed and dried
1/2 red cabbage thinly sliced
1 small handful of mint, parsley and basil roughly chopped
1 punnet of cherry tomatoes, left whole
1 ripe avocado diced
optional: organic sheep milk feta

Dressing: juice from one lemon, a splash of cold pressed olive oil, a sprinkle of salt and pepper

Method:
1. in a small pan, head coconut oil and add Harrisa. Once the Harrisa paste has slightly warmed up add in the  diced tofu. Once tofu is coated and cooked remove from pan
2. throw remaining ingredients into a large salad bowl with the Harissa and season with the fresh salad dressing.
3. serve straight away or pack for lunch the next day.
