Quinoa + Sweet Potato Burgers

Happy Father’s Day to all the Dads, Grandfathers, great grandfathers and everyone else who helps fill those shoes! And extra special Father’s Day to my Dad, Tom! Thank you for always being there for me and giving me the confidence to achieve my goals, you really are the best dad I could ever have asked for!

I wanted to create something a little different to celebrate father day this year, and let’s be honest who doesn’t love burgers! This recipe is slightly different to your traditional cheap mince and highly refined white bun – but it really is scrumptious!

If you are not quite ready to enjoy a complete grain free burger feel free to change things up and enjoy the sweet potato pattie in a salad your bread on your choosing.

This recipe is Gluten free, Dairy free, Grain free, Refined sugar free, Paleo and Vegetarian 

I N G R E D I E N T S

1 large sweet potato, peeled and steamed
1/2 cup cooked quinoa, I used Tri colour
2 tablespoons of coconut or besan flour
2 tablespoons white sesame seeds
1 egg, whisked
handful of parsley, chopped
1/4 tsp turmeric powder
1/4 tsp dried chili (optional)
salt and pepper to season
2 large mushrooms, peeled steam removed and baked in the oven.

M E T H O D

Preheat the oven to 160C
1. In a medium mixing bowl, mash the sweet potato until smooth.
2. Add in the quinoa, parsley and egg and mix well. Stir in the flour and mix well.
3. Let the mixture sit for 5 – 10 minutes before forming into patties.
4. Form into patties – approx 6 and place onto a lined baking tray. Place in the oven and bake for 15 minutes, flipping over half way through.
5. Remove from the oven and serve with the mushroom buns, fresh red onion, alfalfa and aioli
